The Ivory Tower Brewery - where it's all academic! We are proud to be partnered with Academic Affairs and be the home of the brewing class here at Appalachian State University. Headed up by Dr. Brett Taubman and Dr. Shea Tuberty this class provides a rigorous coverage of the chemical, biological, and physical processes that go into brewing malted beverages, including coverage of the hops, malt, and yeast varieties and how they are combined to produce specific styles and flavors of beers. The class also covers the history of fermented beverages as well as the business side of beer and brewing. Students enjoy a "hands on-minds on" approach to brewing basic styles of beer during class at the Ivory Tower Educational Brewery in the Broyhill Events Center.
