Brasserie Fantôme is, by certain measures, one of the most authentic and most eccentric breweries in the world. Since it opened in 1988 in the Ardennes Forest, auteur Dany Prignon has been producing Belgian farmhouse ales in a very similar fashion as they were made a hundred years ago, with local ingredients adjusted for the season and a prioritization of making delicious beer over consistent beer. In that regard, Fantôme is a link to a world before the mass industrialization of beer production, where the terroir, the weather and the brewer's daily tweaks and experimentation were all expressed in any particular batch (or even bottle) of beer. Fantôme is always interesting and often excellent, with the occasional mind-blowingly exceptional bottles that can haunt you for years. The brewery has always been very secretive about the herbs, fruit and spices that might make it into a specific batch, especially the seasonal releases; as is often repeated, "the Ghost never gives up its secrets." We strongly encourage taking a step into the unknown, embracing the mystery, and enjoying each bottle as a unique moment in time and space.
